Dried Apricot Liqueur

Something else for the Christmas pantry.  I must say Marks and Spencers do some very nice dried apricots although they are a tad expensive.  Something that is simple, and yet produces a drink and tipsy fruit which can be used as a pudding .  Can't be bad eh. 

Ingredients

Approx 11oz/300g dried apricots
1 cup/225g sugar
2 cups/500ml Vodka

Method

Boil the apricots in a little hot water to soften them and then combine all the ingredients in a preserving jar. Shake daily or each time you go past to mix the sugar into the Vodka.  Let it sit for three weeks or so and then separate and drain the fruits off - serve them with cream; drink the liquid as you would a liqueur.  Easy and quick to make at any time of the year.

  1. Ah, another variation on Raspberry Ratafia. I wonder would it work as well with fresh apricots? I got two reduced trayfuls recently (over 11lbs of fruit!) for £1 a tray, and have committed them to the freezer for winter puddings.

  2. I have done both ways BB - both have worked. Including using the small wild plums or cherry plums, mirabelles in vodka. I usually use a preserving jar and put as much fruit in as I can and then top up with a little sugar although I err on the side of caution with this only adding a little sugar as can always add a little more later on if not sweet enough then the voddie gin brandy whatever. I did fresh Apricot Brandy last year but also have a recipe using the dried apricot brandy as well just in case run out of things and no suitable fresh fruit available.
